Take store bought hummus from to the next level with this delicious and speedy layered hummus dip! Roasted red pepper hummus is piled high with a mountain of toppings including feta, cucumber, tomatoes and parsley, then drizzled with a flavorful balsamic glaze.
This shortcut layered hummus dip has been my hands-down favorite snack/appetizer to whip up when I have last minute company.
Though let’s be honest, most of the time I have enough advance notice but wind up reading blogs, snuggling ze bebe, washing sippy cups, attempting to tame my frizz-monster of a mane, finding yogurt or avocado or some unacceptable substance in the aforementioned mane and playing the do I really have to wash my hair?! game while attempting to clothe myself and OMG-WHAT-AM-I-GOING-TO-FEED-THESE-PEOPLE!?
Of course it doesn’t always go down quite like that. Sometimes I make this with nothing more than the intent to shovel it into my face.
There may only be 2.5 of us living in this house, but a tub of hummus is a one day affair over here. The second it’s opened, it’s a mere hour or so from utter annihilation. Fancifying it simply slows us down a little.
Why yes, I do use toppings as obstacles to slow me down. Why no, it doesn’t work one bit. I still eat faster than the Cookie Monster.
mmm… cookies. I should make us some… Until then, we hummus!

Vegan? Skip the feta and add extra veggies! Olives and scallions also make a great addition.
Gluten-Free? Nix the pita chip dippers and saddle up with a pile of cucumber slices, carrot sticks, celery sticks, and sliced bell pepper.

It looks absolutely delicious!
oh, damn that’s smart! and you didn’t even dirty up a bowl!
No dish dance. Do it.
I love dressing up hummus. There’s a dip I make all summer long and the concept is similar to this one. Start with a bed of hummus and load it up with yummy and flavorful veggies. The version I make came from Farm Fresh Feasts and includes artichokes, olives and banana peppers. It’s fabulous, although I may have to give yours a whirl on my next go around. Give this balsamic reduction drizzle action a try.
mmmmm artichokes! Though you know me and my olive-phobia! haha I need to get over that one!
Oh I LOVE red pepper hummus! Great idea to jazz it up with toppings! Also snozzberries…LOL!!
Yummus. Narf. Seriously a great idea though! Why haven’t I ever thunk of that?
And those cookies look amazing! Can’t wait for the recipe on those babies.
Always a good snack!
I’ll have to try this with the balsamic reduction, but our favorite dip around here is hummus/feta/cucumber/tomatoes. So flipping delicious!

I love the remix. But as a side note, I have to say…Harris Teeter hummus is AWE. SOME. As a store brand fresh made food, I find it to be superior to all of the big brands. I usually go with their standard traditional, but I’ve had the roasted red pepper too. And it’s the jam.
I want to comment on how yummy the hummus sounds, but I got distracted by cookies. C is for cookieeeeeeee
I need this like whoa.
You really do =)
Why haven’t I thought of this before? So genius
I love this idea!!! And it’s so pretty!
mmm i love me some hummus and hummus with feta?! that sounds even better. xo jillian – cornflake dreams
As Stephie would say, hummus is yummus. Hope your week is going well. Kiss chickpea for me. xoxo
Great idea! I love doing things like this….thats what i did with sweet potatoes last week, made it into a giant superfood by stuffing it with all the goodness I could find! I do not like that you put a picture of a cookie afterwards though….as now THAT is all I am thinking about rather than the hummus….you woke my sweet tooth up!
