My apologies kiddos! Luckily I had my WIAW post ready yesterday and when I hopped on twitter this morning your party tweets tipped me off that today may not actually be Thursday… Somehow I lost an entire day in the shuffle! Yowza! I can’t quite blame pregnancy brain for this one can I? How about baby brain? Or hi my name is Jenn and I haven’t slept in a month brain!?! That sounds fitting =) Party on, darlings. Party on.
Lately I’ve had breakfast on repeat around here: cereal [usually something high fiber and oat-packed] and a pile of fresh fruit. It’s simple yet satisfying!
I cut out coffee [I KNOW! Inconceivable!]
and as a result day dream that I’m drinking buckets of the stuff.
One time Paul left his out on the counter and I chugged the entire mug in a sitting. Then I came to, and realized I had just imagined the whole thing. Sleep deprivation makes me a bit delusional. I think it’s time to buy some decaf. Stat!
Lunch was an amazing chickpea tuna salad sandwich that my friend Marisa made. I also scarfed some of the zucchini bread she brought over too but forgot to photograph the evidence. I’m not sure I even cut into the loaf… I think I just tore a piece off like a total animal. Hunger does that to me.

Snacks consisted of fistfuls of fruit, cucumber slices dipped in caesar dressing, and a chocolate cherry larabar for good measure.
And as for dinner? Baked Spaghetti! I need to pry myself away from the babe long enough to write up the recipe for this one… but in the meantime, it’s ridiculously similar to [this recipe] — so hopefully that will hold you over for the time being! This time around I put Paul in charge of topping the casserole with cheese. I think he may have gone a tad overboard. Holy mozzarella, batman! I’ll take it!

We’ve gone the snack route before and not only was it a huge success, it also gave us virtual smorgasbord of inspiration and ideas. So along with your typical WIAW day-of-eats post, share some healthy Halloween snack ideas! You can show off a collection of treats from friend’s blogs or whip up your own to share — even add in a few fall-inspired meals and snacks that have nothing to do with the holiday but everything to do with seasonal eats! Spin it however you’d like and have fun with it this month! If you run around in circles pumpkin-spicing everything from your morning coffee to your cat… that’s quite alright with me. We’ll be celebrating all month long so feel free to jump in and participate any week you choose!
