ahhhhhhhhhhhh!!!!!!!!!! OMGOMGOMG!
I just ran a lap around the kitchen with a spoon in my hand.
[I learned from my butter knife incident]
I’m a *tad* excited..
This is actually my first-ever taste of a *SWEET* sweet potato!  Up until now, I’ve only eaten them savory style —  Crazy right?  I still can’t believe I managed to take a photo, considering I didn’t want to wait another second without this in my mouth.
 
[and yes, that’s what she said, what he said, + what you’ll be saying if you make this.]

::Carrot Cake Stuffed Sweet Potato::

grab a fluffy baked [or microwaved!] sweet potato and stuff it with….
crumbled leftover carrot cake or my uber amazing carrot coconut bread/muffins
a hearty sprinkle or two of cinnamon
shredded coconut
chopped walnuts
drizzle with honey walnut cream cheese icing and try not to swoon face first into the plate

    oh man, these look SO good!  i had only eaten sweet potatoes SWEET style up until a couple months ago when i tried them savory style.  love them both ways, but i still think the sweet style is my favorite (thanks to my raging sweet tooth).

    This is such a great idea. I wish my fiance liked sweets. I can’t make stuff like this because I will eat it ALL! By myself!! Great idea though!!

    Oh my word. Behold. A plate of amazingness. If there are two things I love (and there are) it’s sweet potatoes and carrot cake.

    You just “upped” your awesomeness factor. :)

    Clearly, I enjoy using words with “ness”…or just adding “ness” even if it doesn’t traditionally belong there. Throw caution to the wind. And grammar.
