Such a delicious day… I could seriously eat this same group of foods non-stop for a week and not tire of it! My extra cup of veggies for the Veg Pledge Challenge snuck in via the veggie salad I served my falafel over. I normally tuck them into a pita sandwich or simply dunk ‘em in tzatziki sauce, but since I’m trying to pack in more veggies, the salad made the perfect pairing for the chickpea balls. The vegetables amped the nutrition density of the meal and gave the hearty falafel a light and refreshing spin.
