This What I Ate Wednesday, as well as every day for the next two weeks, I’ll be vegging up my eats by striving to eat an extra cup of veggies.

[breakfast] a hot cup of black coffee (really loving Emeril’s Big Easy Bold right now!) and love grown cranberry pecan granola w/ fage greek yogurt
[snack] nature’s box veggie chips
[lunch] a delish homemade salad with baby greens, tomatoes, avocado, veggie patch falafel, chia seeds and a mix of ranch and italian dressing
[snack] baked snap pea crisps
[dinner] two over-stuffed lentil veggie tacos with a side of guacamole and tortilla chips [dessert] one cadburry creme egg… my favorite thing about springtime =)
