While I catch up with a few of my favorite people evahhh, you guys get to catch up on some of my absolute favorite recipes from the past month or so.  I promise it’s a fair trade.  No?  Well then OBVIOUSLY you need to be part of my next vacation.  Get on that =)

lentil mushroom bean blue corn tacos
salmon chop chop feta curry tomatoes rice
veggie tuna salad cucumber cups
loaded mexican sweet potato black beans guacamole greek yogurt
Crap, now I’m hungry again!

    Take a bite of the Big Apple for me.  Now I’m off to wash off my tongue from licking the screen.  When will they ever have scratch and lick laptop screens?

    Have fun in NY!  I can’t wait to try your mashed cauliflower recipe – I’ve been looking for a recipe for a while, but I’ve always been nervous to try it.  The addition of the onion and garlic  seems wonderful though – I might even try it tonight!

    I tried the sweet potato & it was DELISH! I made a few changes because I don’t like black beans. I used black olives & just the cheese I had on hand. LOVE!!

    I make a meal with Jersey sweet potatoes, beans, and veggies almost every week, but yours looks awesome! I’ll have to try the lentil tacos soon; I never thought to use them like that! Have fun!
