What I Ate Wednesday Turns 40!

Super Speedy Veggie Panini!

Instead of loading two slices of bread with cheese + meat [a typical panini], I folded a large slice of pumpernickel in half, loaded it with leftover sauteed veggies that needed to get used up and topped it with a slice of provolone cheese before popping it into the panini press [works just as well on a skillet grilled cheese style!]  Instead of pairing it with chips I  simply added more veggies to the plate.  Quick, easy and under 200 calories if you’re like me + happen to view veggies as a calorie-free food πŸ˜‰

Two servers actually approached me to ask about this dish.  They said they’ve been dying to try it based on looks alone.  Sadly my photo doesn’t do it much justice but oh. my. gosh. YUM!  I passed on the ciabatta bread since I had already eaten a bread stick with my salad, but the meal was so filling I didn’t miss the bread!  The white wine broth had carrots, onions, spinach, mushrooms and herbs in it and tasted absolutely amazing.  I would totally get this again =)

    Really? You liked the seafood brodetto? That’s what my friend got when we went to Olive Garden to celebrate him kicking my butt in bowling. I tasted it, but neither one of us were very impressed. Of course, Clarksville’s OG isn’t really known for it’s highest of standards…

    I can’t believe WIAW is already 40!! It’ll be retirement age before you know it…well have to buy it a beach house in the Bahamas! πŸ˜‰

    And I agree, veggies are most definitely calorie free!

    Once midterm madness is over I really want to start participating in WIAW! I love how you say that you consider veggies a calorie-free food – – I TOTALLY agree! With veggies, it’s always the more the merrier! :)

    She does it again!! You always have the most interesting breakfasts- I always seem to go with the sweet things.
    that lunch looks fab. I don’t think veggies should count. you burn them off breathing, haha.

    Oooo! That seafood brodetto looks really really ridiculously good-looking. I know people hate on the Olive Garden, but I love it– even after working there. :) And, congrats on the big 4-0!

    40! Wow – amazing!! So annoyed I couldn’t participate over the last few weeks although it’s great to part of the (ever increasing) gang again. It’s my tenth one:)
