Lots of yummy, fragrant curry powder
olive or coconut oil for sauteeing
Cube and boil sweet potatoes in water seasoned with a pinch of salt and black pepper. Boil until the cubes are tender enough to mash easily with a fork and use your favorite mashed potato recipe to finish off your sweet potato mash. I added a little bit of sour cream and paprika to mine. While your potatoes are cooking, saute veggies and garlic in a tiny bit of olive or coconut oil until slightly tender. Next move some of the veggies aside and add a splash or two of coconut milk [can be substituted] and a teeny bit of flour to the middle of the skillet. Stir vigorously until mix thickens and add your curry powder to make a healthy curry gravy. Season to taste + layer your eats in a casserole dish to bake at 350F for approx 20 minutes.
