Curry Sweet Potato Shepherd’s Pie

This is a little dish I like to call an UN-Recipe.
No rules. No measurements. Just good, healthy eats!

What’s in it?
Veggies! [carrots, peas, onions]
Mashed sweet potatoes [with your favorite mash-ins! I used sour cream]
Flavor! [garlic, freshly ground black pepper, garlic powder, paprika, + cumin]
Lots of yummy, fragrant curry powder
a little coconut milk + flour to make a gravy [this is what you’ll add the curry to]
olive or coconut oil for sauteeing

Brontosaurus chefs + T-Rex chefs This is super versatile! Add whatever you’d like!

Get Cooking!

Cube and boil sweet potatoes in water seasoned with a pinch of salt and black pepper.  Boil until the cubes are tender enough to mash easily with a fork and use your favorite mashed potato recipe to finish off your sweet potato mash.  I added a little bit of sour cream and paprika to mine.  While your potatoes are cooking, saute veggies and garlic in a tiny bit of olive or coconut oil until slightly tender.  Next move some of the veggies aside and add a splash or two of coconut milk [can be substituted] and a teeny bit of flour to the middle of the skillet.  Stir  vigorously until mix thickens and add your curry powder to make a healthy curry gravy.  Season to taste + layer your eats in a casserole dish to bake at 350F for approx 20 minutes.  

So, how was it?
Super yummy! Adding a GIANT helping of curry powder to the veggies made them a perfectly delicious counterpart to the tangy sour cream mashed potatoes.  I had been anti-sweet potatoes for most of my life because I was always served them as a sweet dish (with cinnamon, maple syrup, marshmallows, etc) instead of as a savory side.  Oh-My-Gosh! Savory sweet potatoes have finally replaced regular potatoes for me in almost all dishes.  My favorite way to eat them is mashed with a little sour cream and green onions but when my friend Paije of the blog Veggie Monster posted a shepherd pie she had made it totally inspired me to just run to the kitchen and see what I could whip up sans-measurements.  As for the  dish featured here, it made a delicious and easy dinner that I am absolutely making again =)  

Which do you prefer? Sweet potatoes or white potatoes?

    Sweet potatoes, hands down. I sort of dislike regular potatoes, they taste like cotton balls to me… don’t ask…

    I love this recipe- very open to interpretation, just the way I like it!

    I LOVE sweet potatoes… Jason isn’t a fan, so I make those when he is out of town, which lately has been a lot :(

    I do a lot of this kind of cooking – UN recipes – when I started blogging it was something I had to really focus on, writing notes as I went, and sometimes having to make the dish again to write a recipe! :)

    I don’t discriminate! I truly love ALL potatoes! (I spent half my childhood in Idaho, after all). However, favorites include: oven roasted baby potatoes with olive oil, garlic and rosemary, sweet potato oven fries, latkes, and twice baked (topped with lots of sharp cheddar).

    I love the healthfulness of your Shepherd’s Pie! Yummy!

    oh this loooks so great!!!!! i definately like sweet potatoes betters hands down for sure!! 1) they are colorfully organge 2)they are delish 3) top with marshmellow and brown sugar = dessert time

    I’ve never made a shepherd pie anything……BUT anything sweet potatoes is a winner in my book! Sweet potatoes are definitely one of my favorite veggies. Yum!

    I’m not the biggest potato fan…unless they are French fries. :) I don’t eat sweet potatoes very often and I don’t know why. They taste amazing!!

    I prefer sweet potatoes, but I like both. My dad only like white potatoes though, so I usually cook dishes with white potatoes when I’m cooking for both of us.

    This looks fabulous though & I’m totally bookmarking it to make when I’m living on my own again in NC this fall

    First off, can you believe I have never had shepherds pie? Craziness, I know.
    Secondly, girl this looks INCREDIBLE! I LOVE that you used sweet taters!! I love love love me some sweet taters, but I think if I made this I would use white just because thats the only way my hubby would eat it!! He isn’t a fan of sweet taters unless they are in fry form!!

    This looks delicious! I have a Rachel Ray sweet potato shepherds pie recipe I’ve been wanting to try but I think I may have to wait until it gets cooler again :)

    I loooooooove shepherd’s pie made with sweet potatoes! I just had some made with brown lentils for supper. So. Very. Good. Given the choice, I will ALWAYS go for sweet potatoes. Well, unless I’m having brunch at my parents’ house…my dad makes the best pan-fried potatoes and onions in the world.

    Mmm this looks great! I’m definitely not a sweet potato person :( The only way I like them is in this Thanksgiving casserole thingy that is full of butter and brown sugar. It’s definitely more of a dessert with all of the crap that’s in it! So I just keep it on the Thanksgiving menu, once a year is enough to be eating whole sticks of butter :)
